Some like it hot! And the Jamaicans know just how to do it. Bring some Caribbean sunshine to your kitchen with our fabulous Jerk Chicken recipe using your Jamaican kit.
YOU WILL NEED:
Your Jamaican herb & spice kit
Chicken- legs, breast, thighs & wings, it’s all good! Leaving the skin on will make it more juicy, but higher in calories.
1 large red onion, chopped
A little olive oil
A splash of vinegar
A squeeze of lime to finish
WHAT TO DO:
Pre-heat your oven to gas mark 4, or 170°c
In a large bowl, combine 2 heaped tbsp of allspice, chilli powder & cayenne pepper, 2tsp of parsley & 1tsp of garlic & black pepper.
Add olive oil & some vinegar and stir continuously until it forms a paste.
Smother the chicken with the paste and arrange in a deep baking dish with the onion.
Cover with cling film and leave to marinade overnight (if you are that patient!).
Remove cling film and stick in the oven. For extra juiciness, cook the lot in tin-foil with a small gap in the top.
Cook for around 50 minutes or until the juices run clear.
Finish with a squeeze of fresh lime juice.
Serve with the traditional rice & beans, a colourful salad or some roasted sweet potato wedges. Amazing!
